Chisholm Grill
In 1995, I, Susan Simmons was managing a
small, slightly upscale cafe on Fairmount Street in
Dallas. My husband, Don was working for Southwest
Airlines in their Data Processing Department. We set
out together to find a suitable building to start our own
little restaurant. I was going to run the day to day
operations and Don was going to handle the business end.
We have roots in Waxahachie and wanted to live and work in
town. Out of the clear blue, the people who owned
the building which now houses the 1879 Chisholm Grill, put
their restaurant up for sale.
We made our purchase on December 26,
1995. Our attachment to the building runs especially
deep since my grandparents had their very first date in this building in 1930. One Sunday after a church picnic, Wilbur Compton asked Ida Mae Story if she wanted to take a walk into town for an ice cream at the
Bedford's Café. Of course, she said “yes”.
The rest is four children and ten grandchildren history!
We try our very best to provide a place
for people to come and enjoy really delicious food in a
warm and caring atmosphere. Almost everything we
serve we make from scratch using quality ingredients.
I know this sounds like an advertisement; but it is really
true. We mix, knead and bake bread two to four times
per day for our tables and for our sandwiches and toast.
All our vegetables are prepared from as close to fresh as
possible. We snap fresh green beans every day.
We cut fresh carrots. We use dried blackeyed peas
and pinto beans. Mashed potatoes are peeled, boiled
and whipped fresh several times per day. Our
macaroni and cheese is made from scratch. We cut all
our produce for salads fresh twice per day. We shred
all our cheese from 40 pound blocks. We cut all our
own steaks. Our pies, cakes, cheesecakes, puddings, all
are made from scratch. We welcome you and we thank
